Apologies for getting this out a little later than usual - the past few days have gotten really busy! I've had a flurry of buyer interest, including two offers coming in on one listing, and I've been working on a new listing as well, and I kind of have to jump on those things!

FROM MY KITCHEN TO YOURS...
Bruschetta!! Generally I like to pass along my tried and true faves, but I'm pretty sure this will BECOME a favorite - just as soon as I get a chance to try it! A friend introduced me to Costco's Bruschetta, so I was pretty excited when another friend found this recipe for me:)
3 cups chopped, peeled Italian plum tomatoes 2 large cloves garlic, minced 2 shallots, minced 1 cup chopped fresh basil 1 tbsp. red wine vinegar 1 tsp. lemon juice 1/2 tsp. pickling salt 1/4 tsp. fresh ground pepper 2 green onions, minced 3 tbsp. tomato paste The bruschetta I had was fresh, but they offer the canning instructions: Combine tomatoes, garlic, shallots, basil, vinegar, lemon juice, salt and pepper in a stainless steel saucepan. Bring to a boil over high heat, reduce heat and boil gently for 5 minutes, stirring frequently. Stir in green onion, tomato paste and return to a boil. Remove hot jars from canner, and ladle salsa into jars, leaving 1/2 inch head space. Process 20 minutes for half pint jars.
