FROM MY KITCHEN TO YOURS...
Generally, I like to bring you my "tried and true" recipes, but I found a new one I thought I would share. I haven't tried it yet, though it is on the menu for my kids' upcoming Halloween party!
Pumpkin Spice Cookies
1 cup butter, softened1 cup sugar2 large eggs1/4 cup spiced rum*3 1/4 cups flour2 tsp. baking powder1/2 tsp. salt1/2 tsp. pumpkin pie spice Mix dough as usual, and chill for one hour. Preheat oven to 350 degrees. On lightly floured surface, roll dough to 1/4" thickness. Using a 4" pumpkin cutter, cut out dough. Bake 8-10 minutes or until lightly browned. Cool and frost. ICING 1/4 cup cold water3 tbsp. meringue powder2 cups confectioner's sugarFood coloring, optional * May substitute 1 tbsp. vanilla extract and 1/2 tsp. rum extract for the spiced rum if you prefer.
